LAUREN Beavers, a culinary student at South West College, Dungannon, has won a highly coveted scholarship with world-renowned chef, Raymond Blanc.

Le Manoir aux Quat’Saisons Scholarship is a two week tailor-made experience awarded to the most outstanding student from Northern Ireland, enabling the winner to cook with some of the world’s finest chefs in the two-Michelin starred kitchen.

The competition, in its first year, took place at North West Regional College.

There was only one prize awarded on the night, which Lauren (an NVQ Level 3 Diploma in Professional Cookery year 1 student) collected easily.

The judges commented that her cooking was “unbelievable”, “full of depth and flavour” and that she was “a chef beyond her years”.

The scholarship includes accommodation and mentorship under the personal direction of Raymond Blanc in his two-Michelin starred eatery in Oxfordshire.

Le Manoir is the only country house hotel in the UK which has achieved two Michelin stars for a total of 28 years.

Raymond Blanc has recently completed two BBC series of Kitchen Secrets.

Throughout the evening the judging panel expressed their praise at the standard and quality of culinary skills which were displayed by each of the finalists.

Head Judge, Sean Owens, commented: “Each finalist at this event is a winner...we have been overwhelmed by the standard of skills on view, especially the attention to every detail they make to their work. It is safe to say that the future of catering in this country is very much in safe hands.”

Coupled with the scholarship, Lauren also received a bursary of £300.

The ‘icing on the cake’ came when the judges referred Lauren to the World Skills Panel for training in 2012/13 as a result of her success.
